I originally emailed Donald about starting up a coffee shop in Thurso. One phone call later, I was down in Inverness having a big chat about machines, grinders and beans at Highlander Roastery. I was feeling super confident talking to Donald as he was able to offer me so much advice and information about setting up a business, what equipment to use and most importantly beans to test. Whilst I taste tested the recommended beans, Donald sorted us out with a great coffee machine and grinder perfectly suited to our needs. Donald even set the coffee machine up and tested it for us to make sure it was 100% ready for the job. He drove up and helped install the machine and showed us how to dial in the grinder, leaving us with the tools and knowledge to maintain the equipment. He has been there on the other end of the phone to help out with any situation and has a great team working in the Roastery who never fail to supply us with beans as quick as possible. Honestly it’s made my dream of running a coffee shop become so straightforward and successful that I’m contemplating opening another one!
